Salsa Mojo Picon Rojo is a spicy piquillo and chilli sauce from the Canary Islands. It is made using Piquillo peppers mixed with garlic, chillies and hot paprika. Serve the salsa Canary Island-style with 'wrinkled' new potatoes: 'Papas con Mojo'. The chilli heat makes it fabulous also used as a marinade for barbequed chicken, or to spice up pasta dishes and casseroles.
