These green peppercorns are the unripened fruits of the pepper plant - Piper Nigrum. If left to mature and dried they would turn into the black peppercorns we are all familiar with. They are preserved in brine so they are especially good for making sauces with. I use these most often in a steak peppercorn sauce. Delicious.
